Monte Veronese, DOP since 1996, is a cheese based on vaccine milk, semi-cooked dough, produced in the northen part on the province of Verona (in Lessinia, Monte Baldo and Verona pre-Alps). The main ingredient is the excellent milk obtained from alpine cattle grazing according to a tradition recorded since before 1000 A.D., when it was valuable merchandise for exchange that replaced money . There are two types : “latte intero”, that is suitable with light wines or as second course, and “d'allevo” suitable with tasty recipes and red wines or passito.
