Asparago Bianco di Cimadolmo IGP

This delicate fresh asparagus is well known since ancient periods and it was defined as "prodigia ventris" by Plinio il Vecchio. Its whiteness is an unmistakable sign, achieved by growing the spears completely covered in the fertile soil of the alluvial plain of Piave; dark sheets are spread in order to prevent the filtration of light, thus enabling the sprouting of tender white turions that are lacking in fibrousness. This product can be found in markets only from April to May.
