Asparagus from Badoere IGP (Protected Geographical Indication) appeared in Veneto after the Roman conquest of the Venetian territory. The specialized plantation of this plant dates back to the end of the Second World War in conjunction with the transformation of sharecropping and the abandonment of the rearing of silkworms. The delicate and fine taste of the pure white asparagus spears represent an irresistible temptation. It is better to cook these asparagus when they are fresh to taste their gastronomic value and their fine aroma.
